Gingerbread Latte Cutout Cookies

Tis the season for gingerbread and warm beverages!

Gingerbread cookies are one of my favorite things to make this time of year.  Something about the soft, cakey texture, the spiced flavor and the smell that fills your house and lingers long after the cookies are baked keeps me smiling all winter.



My favorite gingerbread recipe is actually from the uber amazing mama and cookie artist SugarBelle aka Callye. Her recipe is divine! I didn't know I liked gingerbread until I tried it. Seriously, if you question your love of gingerbread, you should try hers, it will convert you!  If you don't need converting and you just want to make amazing cookies, go to the same place. You simply can't go wrong with these cookies.


Do you see those little dark spots? Those are the reason we are here today! The reason you are going to make cookies right now! Maybe you can run to the store first and buy a few things you might not have on hand and then make cookies ;)

So back to those dark spots... Those little flecks are freeze dried coffee. Instant coffee crystals add so much yummy flavor to these already delicious cookies. I prefer Nestle Tasters choice because I don't drink coffee and I can buy these singe serving packets and keep them on hand for baking. 

Gingerbread Latte Cutout Cookies

Ingredients:

  • 1 cup butter
  • 1 cup granulated sugar
  • 1 1/4 cup unsulphered molasses
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp coffee emulsion
  • 3-4 tbsp coffee granules
  • 5 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground ginger
  • 2 1/2 tsp ground cinnamon
  • 1 tsp ground cloves
  • 1 tsp ground nutmeg
Directions: 
  1. Preheat oven to 375.
  2. Cream together butter and sugar until fluffy. Add molasses, eggs, vanilla, coffee emulsion and instant coffee.  Beat until smooth and fluffy.
  3. In a separate bowl, combine flour, baking soda, salt and spices. Whisk to combine.
  4. Add 1/2 of the flour mixture to wet mixture and blend, add remaining flour and mix just until dough forms and pulls away from sides of mixing bowl.
  5. Separate dough into 2 or 3 equal size pieces and wrap tightly in plastic wrap and chill for 1-2 hours or overnight. 
  6. Roll chilled dough out onto lightly flour surface to about 1/4-1/3 thickness. Cut into desired shapes and bake for 6-8 minutes depending on size and thickness. 


Gingerbread cookies can be eaten warm from the oven or you can let them cool and decorate with glaze or royal icing.

If you know your Starbucks red cups, you know this one is from last year... which should tell you about how long it has taken me to get this post written...



Notes: Gingerbread cookie dough tends to be more "elastic" than regular roll out cookie dough, it does spread a tiny bit, but will still keep it's shape well, you can reduce the spread by freezing the cut outs on the cookie tray for about 10 minutes before baking them. Callye's original recipe calls for 1/2 butter, 1/2 shortening. I am not anti shortening, I just don't use it in my regular cookies and therefore don't have it on hand when I make these ones so I use all butter. Instead of vanilla you can try using orange or almond extract, both are delicious! DO NOT try using starbucks via or any other instant coffee packets that also contain milk powder, yuck! Trust me ;)

Meet Baby Boy

Once upon a time, I made cookies. I loved cookies, making them, decorating them, looking at other people cookies, reading cookie blogs etc. A year ago, I decided to make a baby. Three months ago, he was born and now I cuddle, feed, burp, diaper, soothe, carry, rock, bathe, clothe, swaddle, pacify, sleep, and then do it all over again everyday. All day. Seriously. Non-stop.  It's absolutely my favorite thing ever :)

We welcomed Baby Boy into our lives on June 8th at 2:32 pm. We fell instantly in love with all 19.6 inches and 7 lbs 0.7oz of him.

I am exhausted, but oh so happy!
Today, Baby Boy is 3 months old! I just can't believe it! These three months have gone by so fast and he has changed so much!

He's the happiest, smiliest, sweetest little baby I've ever seen!


I mean c'mon :)


We had an amazing experience with our newborn photographer Shauna.  She captured some of the best pictures ever and I will treasure them forever! If you are in the Seattle area and need a photographer, I highly recommend her!

He was almost 2 weeks old when those pictures were taken and I can't even remember how tiny he was! He has grown so fast!





It's really amazing how much has happened in three months!

He loves "reading", "talking" and smiling. And his strong, little legs never stop moving!

Happy Mothers Day and Happy 36 Weeks

This Sunday was not just Mothers Day, it was also the ever important 36 weeks milestone for my baby bump! Baby boy will be here oh so soon! I can't believe how quickly these 8 months have gone by!

This weekend we decided to drive down to Portland and watch the Trail Blazers take on the Spurs in game 3 on Saturday night. I am not sure this was a dr approved trip but it sure was fun. It was the closest game in the series so far, but the trail blazers just couldn't quite pull it off. Hubs and I are actually Miami Heat fans, but we like supporting our local teams and Portland is the only basketball team around here now.

We spent the weekend at my SIL and BIL's house in Vancouver, WA and had perfect weather. Sunday morning I had my first mothers day breakfast (delivered to me in bed, by the niece and nephew). After that we headed into Portland and strolled through the Pearl district eating and walking and eating and talking and just enjoying the sunshine.

Hubs and I both stopped in to the Nike store and bought new shoes, I LOVE mine! I'll need some cute and comfortable shoes to get me motivated after baby arrives :)

Here is my weekly bump picture (top and bottom from Pink Blush), I swear if I get much rounder, I am going to topple over and roll down the stairs!



So here is how we are doing this week, 
  • How far along: 36 weeks as of Sunday. My first Mothers Day :)
  • Baby is the size of…: Romaine lettuce, or a small melon 
  • Weight gain: 36 pounds
  • Baby Bump: So big. So, so big. Did I mention big?
  • Stretch Marks: None yet!
  • Exercise: Lots of walking and light weight lifting. 
  • Cravings: Blueberries, salad, water
  • Mood: Excited and tired 
  • Sleep: More please... Bathroom 
  • Wedding Ring: On for half the day. My fingers get swollen whenever it gets hot or when I am particularly busy so I usually take it off just to be safe. 
  • Baby Name?: All decided
  • Gender: Boy 
  • Movement: He is a mover and shaker. He particularly likes to move after I eat and when I am trying to sleep!
  • Maternity Clothes: I seem to be outgrowing all of my maternity clothes, so it's very good that I am close to b-day!
  • What I am looking forward too: Bringing baby home
  • What I miss: Sleeping through the night and real sushi!
  • Favorite thing this week: So difficult to chose just one! All the components of the nursery came and I somehow managed to put them all together while the mr. was at work! Crib is ready, rocking chair is ready, diaper changing station is stocked, closet is full and I am feeling accomplished! Hubs and I had ahhhhh-mazing massages on Friday night and then we celebrated mothers day in Portland. It was just a great week!
I hope everyone took the time to enjoy and appreciate the mothers in their lives, where would we be without so many great moms?

Hospital Bag and GIVEAWAY!

My absolutely gorgeous diaper/hospital bag arrived yesterday! And now I officially have baby fever!

Carrot Cake Cut Out Cookies

Just in time for Easter, I made a new roll out version of one of my favorite treats! Carrot cake is just so perfectly, perfect for celebrating spring!




As with all my cut out cookies I started with my basic Citrus Vanilla cookie recipe. It's a recipe that I've tested and tested and I know it's great and it's so easy to adapt the flavors.

I added more flour and sugar to this version as you can see, because the carrots add a lot of extra moisture into the mix. If you want to stick with the original measurements or if you choose to use your own recipe and adapt it for these flavors, just squeeze out the carrot juice before adding the grated carrots to the dough.


Just look at those delicious carrot shavings and spices all mingled together! 


Carrot Cake Cut Out Cookies

Ingredients:
  • 3 1/2 to 4 1/2 cups Flour
  • 2 tsp. baking powder
  • 1 cup packed brown sugar
  • 1 cup butter, cold
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1 tsp ground nutmeg
  • 1 cup grated fresh carrot (I used a zester to get very fine pieces)
  • 1/2 cup finely chopped walnuts or pecans (optional)
  • 1/2 cup finely chopped flake coconut (I like to pulse it in my food processor a few times just to break it down so the dough cuts easier)

Directions:
  1. Preheat oven to 350 degrees.
  2. Combine the flour, baking powder, cinnamon, ginger and nutmeg in a separate bowl and set aside
  3. In your mixer, cream the butter and sugar together.
  4. Add the egg and vanilla extract and beat until smooth.
  5. Add the grated carrot and mix until incorporated.
  6. Gradually add in the flour and spice mixture while mixing. Scrape the bowl as you add. 
  7. Add in coconut and nuts (if using) with the last addition of flour and mix until dough is uniform and pulls away from the bowl.
  8. Roll the dough out onto a lightly floured surface (I usually do this on waxed paper sheets so I can pop the into the fridge to firm up)
  9. Cut out the shapes you want and place onto your cookie sheets (lined with parchment paper, not waxed paper!)
  10. I usually place a tray of cut out cookies into the freezer for at least 5 minutes before placing in the oven, they hold their shape much better this way!
  11.  Bake for about 10-12 minutes. Cookies will be lightly golden on the bottom to very slightly brown on the edges. Remove from sheet and cool on rack.


This recipe yields a softer cookie, with a texture closer to Lofthouse sugar cookies (my weakness). These cookies are super delicious anytime, but seemed perfect for spring! So you can decorate them however you want!

Cookies and baby update

I have so many things to catch up on! And a few great new recipes to share with you! But first, a little update on cookies and the bump!
The last time I shared a picture, I was only 20 weeks and anxiously waiting for my appointment to find out if baby was going to be XX or XY.

And... it turns out our little bundle of joy is a sweet baby BOY!

Week 20. Hello baby boy!

Baby was not remotely shy this round and was happy to show off his goods ;) 

Week 30!
I feel like I doubled in size from week 20 to 30! And here is where we are now,
  • How far along: 30 weeks this past Sunday, 31 just a few days away! I can't believe only 9 weeks to go! 
  • Baby is the size of…: a butternut squash (17 inches and weighs a little over 3 pound!)
  • Weight gain: 30 pounds
  • Baby Bump: Is big and very noticeable! I am not sure exactly what it is about being pregnant that attracts the long and steady gazes of small children, like everywhere I go... It's strange. And it makes me laugh ;) 
  • Stretch Marks: None yet!
  • Exercise: I try to get at least 35 minutes on the elliptical and low intensity stretches and weights several times a week.
  • Cravings: Strawberries, watermelon, dates, water, waffles and lemonade (Starbucks iced passion tea lemonade to be specific, I could drink a gallon of it everyday, but I don't). 
  • Mood: Happy and tired, but mostly HAPPY :D
  • Sleep: Lots of tossing an turning and every time I move, baby decided he needs to move too! 
  • Wedding Ring: On
  • Baby Name?: All decided <3 li="" nbsp="">
  • Gender Prediction: I was totally WRONG about this! hahaha I was so sure it would be a girl. 
  • Movement: All day and day and several times at night. He's a busy little mover and shaker.
  • Maternity Clothes: I started off buying just a few bottoms and tops Pink Blush and then snagged a few more at local maternity stores. I really have been living in leggings and maternity tops and at this point I just don't want to buy anymore with only 9 weeks to go!
  • Baby Clothes: It's sooooo hard to not buy baby clothes! I keep telling myself not to buy anything else until after the shower, but it seems like every time I leave the house I come with something for baby!
  • What I am looking forward too: Baby shower!
  • What I miss: Sleeping through the night (on my back!) 
  • What I am not loving: All this added weight is really straining my feet and legs! My calves and feet have never been so sore! 
  • Favorite thing this week: Sunshine! We have had some really gorgeous days this week and I have loved being able to walk around outside and soak it up! 
I am still making cookies, just a few orders a week instead of a few hundred a week. I appreciate the smaller load, I am not sure I could handle much more than I am currently doing! 

Shipped these out earlier this week for a fun Seahawks theme baby shower! Now I kinda wish I was having a Seahawk baby shower!

Baking/Blogging Bucket List

My pinterest boards are bursting with "to-do's" but not very many have moved to the "tried and true" or even the "epic failure" boards (I don't actually have an epic failure board, but with the long list of very intimidating recipes I have ahead I foresee one ;)

Nursery Plans

The one thing I had known for sure when I got pregnant was that I wanted to do the nursery in mint and gold. It's pretty, it's gender neutral and it doesn't need to be overdone to be great!

I had pinned a ton of ideas over the last year (way before we decided to get pregnant!) that I really loved and some of them will definitely end up in the nursery!

20 Weeks

I am officially halfway through this pregnancy! It's so crazy to say that, I feel like I JUST found out! It's already gone by so fast. 
I am not really tired, but I have no energy if that makes sense. Making cookies seems impossible just about every day, but I have so many ideas that want to be created! The mr got me a sewing machine for Christmas so I plan to start on my lengthy list of crafts instead! 



I bought this picture frame over a year ago and painted it in a lovely mint green shade. It's been sitting in our spare room for ever! After finding Charlene's blog Becoming the Barrs, I decided I was going to use the frame to document baby's growth month to month. 


We're currently super excited to watch the NFC championship game today! GO HAWKS! 

I can't even remember how many of these cookies I made this week! Seattle is a great place to live and a great place to watch football!



So here is how I am doing this week, 
  • How far along: 20 weeks on Sunday, already halfway done baking! 
  • Baby is the size of…: a mango, a banana or an eggplant depending on which one of my pregnancy apps you believe
  • Weight gain: 10 pounds
  • Baby Bump: Oh yes! Been showing for several weeks now and my belly button is getting close to being an outie!! 
  • Stretch Marks: None yet!
  • Exercise: I try to get at least 35 minutes on the elliptical and low intensity stretches and weights several times a week.
  • Cravings: Fresh fruit, loft house sugar cookies, girl scout cookies, waffles, starburst, dates, anything grapefruit...
  • Mood: Happy and tired, but mostly HAPPY :D
  • Sleep: A little more would be great, I am sleeping pretty well at night, but having CRAZY dreams and waking up sore. 
  • Wedding Ring: On
  • Baby Name?: We've got baby girl covered, but not for a boy...
  • Gender Prediction: Girl
  • Movement: I think I am feeling movement, several times a day and at night!
  • Maternity Clothes: I found some great maternity clothes at Pink Blush and luckily scored some awesome deals on cyber Monday. 
  • What I am looking forward too: Finding out who baby will be 
  • What I miss: Sleeping through the night (on my back!)
  • Favorite thing this week: A totally sweet mint and gold surprise from my awesome friend Natasha! It's so perfectly perfect and unexpected and I just can't wait for baby N to get here and enjoy it!

Brownie Bottom Raspberry Coffee Cake

I could eat coffee cake every day, it's one of my most favorite things. It's delicious any time of day, and it's a perfect portable treat for office parties, brunches or just because you feel like baking and want to share it! I really love the crumb topping and soft texture of the cake. Extra points for fresh berries or a ribbon of cream! This recipe pairs the perfect texture of coffee cake, with a delicious crumb top, a ribbon cream cheese, fruit preserves and (that's right AND) a rich, decadent brownie bottom! What could be better?!



This coffee cake is super simple and absolutely delicious! You can start with any brownie recipe you like, or even grab a box mix if you really want to simplify! The other half is my favorite coffee cake recipe. It's so tasty and so versatile!



For the brownie bottom,

Ingredients:

  • 1/2 cup butter, melted
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/2 cup flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp instant coffee powder
  • 1/2 tsp salt

For the coffee cake,

Ingredients:

  • 2 1/4 cups flour
  • 2/3 cup granulated sugar
  • 3/4 cup butter, softened
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 cup sour cream or greek yogurt
  • 2 eggs
  • 1/2 tsp vanilla bean paste (or vanilla extract)
  • 8 ounces of cream cheese, softened
  • 1/3 cup sugar
  • 1/4 tsp vanilla extract
  • 3/4 cup raspberry jam



Directions:

  1. Preheat oven to 350°
  2. For brownie base, combine butter, sugar and vanilla in mixer bowl. Add eggs and mix until well blended.
  3. In separate bowl, combine flour, cocoa baking powder and salt. Gradually add dry mixture to wet mixture and beat well between each addition.
  4. Spread brownie batter evenly into bottom of greased 9x12 pan or 18 muffin cups.
  5. For coffee cake, combine flour and sugar in a medium bowl. Add butter and blend with a pastry cutter until mixture resembles course crumbs. 
  6. Set 1 cup of crumb mixture aside. 
  7. Add baking powder, baking soda to mixture and blend.
  8. In a separate bowl mix sour cream, vanilla bean and 1 egg.
  9. Add wet mixture to dry mixture and stir until just moistened.
  10. Pour mixture on top of brownie base and spread evenly.
  11. In another bowl, combine the cream cheese, vanilla extract, 1 egg and 1/3 cup sugar. Beat until smooth. Pour cream cheese mixture on top of cake batter. 
  12. Spoon dollops of raspberry jam onto top and gently run the spoon through the batter to swirl in.
  13. Sprinkle reserved crumb mixture generously on top of cake.
  14. Bake for 40-45 minutes or about 20-25 minutes if making individual coffee cakes in muffin pan.
  15. Coffee cake will be done when edges turn golden.


I hope you enjoy these tasty treats as much as I did! These pregnancy cravings are bringing together some pretty delicious recipes ;)

*Tips*
The coffee cake batter is very thick, especially if you use greek yogurt, so I added a 2-3 tsp of milk to make it spreadable. You want the crumb mixture for the coffee cake batter to be pretty fine, but you want the crumb topping to be pretty chunky so when you reserve 1 cup of the crump mixture for the topping, I like to add an addition 1 Tbsp of butter and cut it in to the mixture to make the crumbs larger for the topping. I like to use coconut oil to grease my cake pans, it doesn't add any coconut flavor and it's so easy to rub into the pan.

Happy New Year

Christmas this year was so fast and furious! I don't think I managed to take a single picture (aside from Instagram) of the 1200+ cookies I made! Between cookies, family visiting, traveling, and the holiday joy I am not sure I managed to get a much of anything productive done, but I sure had a lot of fun this year!
If you follow along on Instagram, you have probably already seen most of the picture to follow but I am sharing them here just to recap the past few months!


These were the very last set of Christmas cookies I made this season! Simple and festive!



600 gingerbread cookies for REI's holiday employee party! They smelled absolutely amazing and might be the most delicious cookies ever! If you haven't tried Sugarbelle's gingerbread recipe, YOU MUST! I am not even kidding when I say they are incredible :D

We put up our tree, hung our stockings and decorated the house, and on Christmas morning we had cinnamon rolls! Pretty much the same things we do every year, but this year we added a little something new!

An extra stocking!! Baby Ngy will be joining us in June and I am so darn excited!


We rang in the New Year in downtown Seattle, and watched the fireworks at the space needle! I may or may not have taken a nap around 10pm… Growing a person is tiring! At least that's what I tell my husband when he asks what I did all day ;)

Here's where we are now:
  • How far along: 17 weeks, 18 this Sunday
  • Baby is the size of…: an onion
  • Weight gain: 10 pounds
  • Baby Bump: Oh yes!! Been showing for several weeks now!
  • Stretch Marks: None yet!
  • Cravings: Fresh fruit, strawberry popsicles, miso soup, guacamole, cheesecake, cinnamon rolls, water (seriously, I can't get enough water!)
  • Mood: Happy and tired, but mostly HAPPY :D
  • Sleep: A little restless, I am a back sleeper and that's not working! Plus I have to get up at least once to use the restroom.
  • Wedding Ring: On
  • Baby Name?: We've got baby girl covered, but not for a boy...
  • Gender Prediction: Girl
  • Movement: None, I am so anxious! I spend a good part of the day checking ;) 
  • Maternity Clothes: Yes. For about 3 weeks now. I can still fit in most of my tops, but not jeans. Leggings and maternity leggings are my best friend!
  • What I am looking forward too: Finding out who baby will be and feeling some movement
  • What I miss: Sushi! 
  • Favorite thing this week: Spending time with my sister and seeing her new baby! It got me really excited to meet mine :)

4. Vitafusion Prenatal gummies. I tried several other prenatals and these are the only ones I can stomach
5. No Bake Energy Bites from Gimme Some Oven. So delish!!
6. Organic Cotton Headwrap from Sweet Kiddo Co  on etsy.
7. Strawberry popsicles! I may eat like 3 a day! 

This year, New Years came pretty quickly! Maybe it always does, but it seems like the holidays just flew by today! I am not even sure I had time to think about a resolution!!  But I hope you did! They are fun and sometimes they work out ;)
