Red, white and blue mini's!


Super easy to make these little guys if you have a mini doughnut pan.

I used the standard recipe that come on the package (only I didn't have buttermilk)

Baked Mini Cake Doughnuts
Ingredients:
1 1/4 cup all purpose flour
1/2 cup granulated sugar
1 1/4 tsp baking powder
1/2 tsp salt
1/2 cup buttermilk (or 1/2 cup milk plus 1 tsp distilled white vinegar, mixed and set aside)
1 egg
1 1/2 Tablespoons butter, melted
1 tsp vanilla 

Directions:
Preheat oven to 425 F.  
Spray mini doughnut pan with nonstick cooking spray.
In a large mixing bowl, whisk together flour, sugar, baking powder and salt.
Add buttermilk, egg, and butter and stir until all ingredients are combined, but don't over mix.
Spoon batter into a large pastry bag fitted with a Wilton #12 tip.
Fill each doughnut mold about 1/2 full.  
Bake 4-6 minutes or until the top of the doughnuts spring back when touched or until you can see the golden brown around the edges.
Cool in pan 1-2 minutes, then transfer to a cooling rack

Vanilla Icing
Ingredients:
1 cup powdered sugar
1-2 TBSP milk
1 tsp vanilla extract

Directions:

Combine all ingredients adding more milk or sugar to get a thick, dip-able consistency. Divide into three bowls, leave one white, add a few drops of blue food coloring to one and a little red to the other.
Dunk the tops of the doughnuts into the icing until coated and let excess drip off. You can also add some festive sprinkles while the icing is still wet.


Enjoy these little yummies! They're the perfect treat for a festive 4th of July office celebration.
